Anytime is a good time for a cookie, right?
And the oats seem to make indulging in these ‘healthier’, haha!
These Oatmeal Choc Chip Cookies are only a few ingredients & completely vegan.
Oatmeal Chocolate Chip Cookies:
1 1/4 cups all-purpose flour
1/4 tsp salt
1 cup rolled oats
1 tsp cinnamon
3/4 tsp baking soda
1/2 cup white sugar
1/2 cup brown sugar
3/4 vegan butter
2 tsp vanilla extract
1/2 cup vegan chocolate chips
+ Preheat oven to 350.
+ In a bowl, mix flour, salt, cinnamon, baking soda & oats together
+ In a separate bowl mix butter & white sugar together
+ Add brown sugar & vanilla to butter/sugar mixture, creating a smooth wet mixture
+ Slowly add dry ingredients to sugar mixture until all of it is combined
+ If the mixture seems a little dry, add a tsp of water until the dough is formable
+ Stir in chocolate chips
+ Eyeball cookie scoops onto a lightly greased pan
+ The cookies will spread a little bit, but not too much
+ Cook for 14-17 minutes- the mixture will look a little raw, but they should be golden brown on the underside.
+ Cool & enjoy (or eat immediately like I did and accept how hot the cookies are, haha)
+ Store in an airtight container- for a ‘fresh warm’ cookie, I will take one & wrap it in a paper towel & microwave for about 8 seconds.
