who loves nachos COVERED in nacho cheese?
WE ALL DO.
how about trying a new vegan nacho ‘cheez’ that tastes just the same minus the dairy?
OKAY, YEAH!
Nacho Cheez:
Ingredients:
2 potatoes, chopped
1 large carrot, chopped
1/2 cup jalapeno brine
4-5 slices of jalapenos (i just use already chopped from a jar)
2 tbsp nutritional yeast
2 tbsp almond milk
1 tbsp olive oil
Pepper, garlic powder, salt – to taste
Steps:
+ Boil potatoes & carrots until soft
+ Drain
+ Add potatoes & carrots to blender
+ Add all other ingredients
+ Blend for about a minute
+ Check consistency & taste
+ Add more milk, nutritional yeast, seasonings, etc to your liking
+ Pour over nachos, add toppings & wahlah!
Secret step:
+ Use leftovers with cooked macaroni for a yum, spicy mac & cheese the next day
Oh my gosh, my mouth is watering as I read this post. Nachos are my weakness and those look so good. Will definitely be a must try in our household!
